Carol J. Hastings passed away May 17, 2026 at Niagara Hospice House. Born August 28, 1942 in Hornell, NY she was a daughter of the late Leslie and Elisabeth (LaBarre) Erskine. Carol worked as a cook for Ed’s Country Store & Restaurant in Newfane. She enjoyed cooking, painting, gardening, crocheting, and hosting picnics in her backyard.
Carol is survived by her husband Edward Hastings; sons John (Renee Moshier) Hastings and Douglas (Lori Anderson) Hastings; grandchildren Nicholas, Mallory, and Felicia; siblings Judy (Lloyd) Hamm, David (Janet Clapsaddle) Erskine, and Sue (Dave) Kroening; also furry companion Rue and several nieces and nephews.
Private services will be held at the convenience of the family.
