Gary Thomas Cammarata passed away May 14, 2025 in Roswell Park Cancer Institute. Born December 13, 1950, Gary was predeceased by his parents Santo & Jennie Cammarata and his brother Richard Cammarata. Gary is survived by his brother Bob (Lori) Cammarata, nephews Derek and Michael (Brooke) Cammarata, and two grandnephews Samuel and Anthony Cammarata. He was known as “UNC” by his nephews and grandnephews.
From Gary’s early childhood he had a love for cooking. He was constantly in the kitchen with his mother and grandmother learning how to make all the Italian favorites-especially the sauce. A trait Gary passed along to his nephews. He loved it so much he went on to become a chef, and moved to Las Vegas cooking at a premier steak house. Gary had a vision and wanted to own his restaurant. He moved back from Las Vegas and co-founded Cammarata’s Restaurant with his brother Bob.
Gary loved old cars, owning five Model A Fords (1930’s-1931’s) which he restored to show condition. He even won few trophy’s at car shows. Gary loved the lake and moved to Olcott, NY around 30 years ago. He became involved with the creation of the Olcott Beach Carousel Park, which until his death was the treasurer. Olcott was a special place for him, Gary loved it. He made so many lifelong friendships there.
Gary had many medical issues over the last 25 years having 17 spinal surgeries, but that never stopped him from helping people. He was selfless and never asked for anything in return. Gary was truly a kind and gentle man.
